Refreshing Watermelon and Feta Salad

Ingredients:

Refreshing Watermelon and Feta Salad

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon kosher salt
  • 3 cups cubed local seedless watermelon
  • 1 cup medium cucumber, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup coarsely chopped mint, plus more for garnish
  • Flaky sea salt, for garnish

Directions:

In a small bowl, whisk together olive oil, red wine vinegar, and salt. In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint. Pour over dressing, tossing to combine. Garnish with more mint and flaky sea salt. Serves 4.

Tip: When selecting a ripe watermelon, look for one that 1) feels heavy for its size, 2) has a creamy yellow spot and 3) has a deep hollow (versus dull) sound when tapped on its underbelly.
